Butter Garlic Spot Prawns

Butter Garlic Spot Prawns

Ingredients:

  • 1 pound fresh Port Alberni spot prawns, thawed and shelled
  • 1 teaspoon Italian seasoning (or a mix of local herbs like dill, rosemary, and parsley)
  • 1 teaspoon garlic powder
  • ¼ teaspoon sea salt (less if using salted butter)
  • 1 tablespoon unsalted butter
  • Juice of 1 lemon
  • 1 tablespoon capers (optional)
  • Fresh herbs like thyme and chopped chives (optional)

Instructions:

  1. Prepare the Prawns: In a large bowl, toss the spot prawns with Italian seasoning, garlic powder, and salt. Set aside to marinate.
  2. Cook the Prawns: Melt butter in a large pan over medium heat. Once melted, add the prawns in a single layer. Cook for 1-2 minutes per side until they turn opaque and pink. Remove the prawns from the pan and transfer to a serving dish.
  3. Create the Sauce: Add lemon juice and capers (if using) to the same pan. Simmer for about a minute. Then, spoon the melted butter mixture over the prawns.
  4. Garnish and Serve: Top the prawns with fresh herbs like thyme and chives. Serve immediately, savoring the fresh, oceanic flavors.
